Menu Plan Monday - Week of 2/21



Kids are home today for Presidents' Day. I am TRYING my best to be productive!!  We have a birthday party to plan for this next Sunday. I see that tenderloin is on sale this week so I think it's a no brainer that we will most likely have pulled pork sandwiches for the party! 

Here's what the week looks like:

Monday: Chili, Fresh Bread, Salad
Tuesday: Ham slice with Mac n Cheese, Green beans
Wednesday: Oven Fried Chicken Tenders, Potato Crowns and Corn
Thursday: Poached Eggs in salsa, guacamole and chips
Friday: BBQ Pork Chops, Roasted Potatoes, Apple Sauce
Saturday: Pizza, Salad
Sunday: Pulled Pork Sandwiches, Coleslaw, Baked Potato Fries.

Menu Plan Monday--Valentine's Week





Busy week this week! Ava has surgery this week--tomorrow--and will be spending at least a night and probably two in the hospital and I will be with her. Which means I will be eating hospital food, my mom will be feeding my kids, my husband will be fending for himself or eating with me and I won't be preparing two meals this week, which is fine by me.

Here's what we got going on:

Monday:  Spaghetti and Meatballs, a Salad, and Bread (Ava's VERY favorite meal)

Tuesday: Surgery Day

Wednesday: Hospital Food :(  Actually, it's not THAT bad.

Thursday: Steak, Potato, Green Beans (Ava's least favorite meal--she won't be able to eat it anyway so it will be perfect for the rest of us!)

Friday:  Chili, Mac and Cheese, Cantaloupe

Saturday: Pancakes, Bacon, Baked Apples

Sunday: Oven Fried Chicken Tenders, Potato Crowns, and Corn

(I tried to pick some soft foods since Ava will need a soft food diet for a little while)

Superbowl Sunday: The Blow Up (and Menu Plan)

Thirteen days ago I blogged about a middle of the night wake up call at our house. A week or so ago as I was browsing my blog reader I came across this post over at YoungHouseLove and I thought, how timely.  I cannot stress how ill-prepared we were before our wake up call. We didn't even have a fire extinguisher for the kitchen!  Thank goodness we rectified that situation before yesterday...

So, duh, it was Superbowl Sunday yesterday and we were keeping it low key. Jim wanted to enjoy the game at home in front of his own TV. My mom had to work until right before game time, so we invited my parents over to have some grub and catch the game.  Jim was craving chicken wings and because of our money saving efforts we nixed the idea of spending $50 or more on a few buckets of wings from somewhere and decided to make them ourselves. Well, Jim decided to make wings...I was in charge of the "nachos supremos" (and they were delish, by the way).  So when Jim got the bright idea to use my big pot with the colander insert to deep fry the wings, he only met mild protests from me.  I'm not sure it will work I said, that colander isn't made for deep frying, but I let him go. My husband is usually a master of common sense (compared to me, anyway) and I figured he had everything under control. He's deep fried wings before so I figured he could handle things without me butting in--besides I was too busy jockeying for counter position and the ideal burner to use for my nacho making duties. 

There were a few tip-offs that things were not going to go as smoothly as anticipated. First the wings hadn't completely thawed. We had taken them out earlier in the day but they were still slightly frozen.  The second tip-off was when Jim asked if we had any more vegetable oil in the house. This was after he had already used the two large bottles that I had in the pantry. Absentmindedly, I pointed out an almost full bottle in the lazy susan. My dad stepped in with a cautionary comment about too much oil...but I think Jim was preoccupied with the idea of cooking boat loads of wings at once El fry cook style to heed the warning. The next tip-off was Christina Aguilera botching the words to the national anthem...come on girl you are a professional! I was too busy critiquing, to notice Jim stuffing the basket with too many wings.  He was getting nervous as pre-game festivities were winding down and the game was about to begin and the wings were not yet frying. His master plan had him plopping in front of the TV with a plate of hot crispy wings before kickoff.

I think you all can see where this is going...but if not, let me paint the picture further.  Wings with stray ice crystals clinging in a colander not made for frying.  Gallons of bubbling oil.  Too many cooks in the kitchen. Game clock about to start ticking. Wing cravings messing with the calibration of the common sense meter. Down goes the wing pot. Ice and hot oil react. Pot bubbles over. Three foot flames come shooting out of my kitchen!  Jim tries to blow out flames with slightly more force than blowing out candles on a birthday cake. The flames do go out for a second but then reignite!  Exhaust fan is on fire.  Hot oil is on the floor. Someone grabs the fire extinguisher (I think it was Jim but he doesn't remember doing it). And the fire is out!  But  not before a three foot layer of smoke clings to our ceiling.  Jim spent the entire first quarter cleaning and airing out the kitchen and living room. I suggested we try baking the wings, but he was so disgusted with his temporary lack of common sense that he tossed the whole bag.  I didn't give him much grief, just sent up a silent Thank You that it wasn't me and that the only damage to be seen was a small singe mark on the stove. The floor is still a little greasy this morning but at least my kitchen is in tact and we didn't have to evacuate the house. The girls had been watching TV in the office and didn't have any idea what had happened...The smoke detectors work though.  I urge you once again to get prepared for a fire if you are not. You never know. I am so relieved that we had the fire extinguisher on hand...two weeks ago we would have been not so lucky I think.

So I had to share that story, much to my husband's chagrin. But I also want to share my menu plan for the week.

Monday: Chicken Teriyaki and Fried Rice (since we had Superbowl food minus wings, this meal got pushed)
Tuesday: Meat Pies, Green Beans, and some other side--I haven't decided
Wednesday: Hot Sausage hoagies, Corn, Potatoes
Thursday: Grilled Chicken Salad, Fresh Bread
Friday: Crab Soup, Biscuits, Spinach Salad
Saturday: Date Night--we are going to Atria's...the kids will probably have frozen pizza's
Sunday: Chicken Parmesan, Pasta, and Salad

I realize we are having salad a lot this week...but we've gotta get those veggies in and salad dressings can be so varied that it's hard to get sick of salad.

Menu Plan Monday - Week of 1/31


Share your weekly meal plan at I'm An Organizing Junkie!

Well, I almost can't believe that we didn't eat out more in January!   We stuck to the resolution that I made that we could only eat out three times total for the month and those eat out's had to be planned.  We did only one fast food meal!  My kid's only ate out two meals for the month.  This is quite a feat for me as it seems that we were always jumping in line at Mickey D's when I felt stressed, pressed for time, or just plain lazy.  I haven't counted up the savings but I know that we have cut our eating out by at LEAST half.  I feel great about that and had to share before I posted my menu for the week. But without further ado, here it is:

Monday: Chicken salad on croissants with red grapes on the side
Tuesday: Slow Cooker Roast, with potatoes, onions and carrots
Wednesday: Teriyaki Chicken and fried rice
Thursday: Biscuits with sausage gravy, eggs, and fruit
Friday: Reuben Sammy's, roasted potatoes, beans
Saturday: Pizza and Salad
Sunday:  Picking up home made pasta from our church--then I'll probably make some SuperBowl Snacks for later (Go Steelers!)

Menu Plan Monday Week of 1/24

Shopping is done! I LOVE when I don't have that hanging over my head on a Monday night!  I had a good shopping trip this week...I was happy to be under my $140 weekly budget by $7 and that included a splurge on a Starbucks Chai Tea Latte that I sipped as I maneuvered through the store.

I had a couple of pushed meals this week. One day my husband went to the Pens game and I didn't feel like cooking so the girls and I were satisfied with cereal for dinner! EASY! I'm just happy that I didn't give in and order pizza or go for fast food.  The second pushed  meal was because my husband surprised me with a last minute date night on Friday. So we went out to eat (our last of three "restaurant meals" per month) and then went to Home Depot, bought a few things for a project in the living room, and then browsed around the store for inspiration on upcoming home improvement projects. It was very nice walking around a home improvement store withOUT the girls for once. I know it doesn't sound romantic, but it really was fun dreaming about the plans we have for our home!

On to the MENU! What you all came for:

Monday: Crockpot Mexican beef soft tacos, corn, and spanish rice

Tuesday: Pasta with sausage, spinach, tomatoes, bread, salad

Wednesday: Cheeseburgers, tater tots, and green beans

Thursday: Chicken and cheese quesadillas, roasted potatoes with smoked paprika, Pepper Medley

Friday: Breakfast for dinner!

Saturday: Barbecued Chicken, Baked fries, Corn

Sunday: Frozen Pizza, Spinach salad

Menu Plan Monday - Week of 1/16

It's that time of week again.  I don't think I'm going to get to the grocery store today. My kids are home from school so the usual Monday routine is thrown off a little bit. Not to mention, we have lunch plans with friends (YAY!) and it is a dine to donate for the school where my kiddos go, so I don't have to worry about ANY meals today. (YAY! YAY!)

Happily, I'm reporting that we did not eat out at all last week! Now, if I could just get my husband to do less eating out at work! Maybe if I got up at 4am and packed him a lunch...not gonna happen!

Here's what the week looks like:

Monday:  Dine To Donate. Out to eat at Chili's

Tuesday: Chicken Enchiladas, Corn Bread, Guac and Chips (this is a push from last week...I forgot to figure in Jim's Dad's birthday dinner yesterday)

Wednesday:  Stuffed Pepper or Wedding Soup (homemade from our church ladies), Apple Spinach Salad with bacon, Bread

Thursday: Honey Pecan Chicken Tenders, Roasted Potatoes, Snow Peas

Friday:  Pasta tossed with Sweet Sausage, Tomatoes and  Basil, Tossed Salad

Saturday:  Crock Pot Mexican Beef stuffed Soft Tacos with fixins, Corn, Spanish Rice (still trying to use up taco shells from our New Year's Eve shindig)

Sunday:  Grand Pap's 89th birthday party (I have to make a side, but I haven't decided what to bring yet!)

Menu Plan Monday--January 10

I'm a little late to the party today. We had a busy day. I was able to complete my shopping this morning but had to take Ava to a doctor appointment this afternoon. I left Chloe and Livi with my sister, groceries half unpacked and house in disarray so that we could make it to the appointment on time.

I was pleasantly surprised to find that BOTH little ones took naps while I was gone (but why won't Livi nap for me?? I think she might be coming down with a cold or something) and my sister had straightened up a bit.  I was so tempted to scrap everything when I got home and order something, but I fought the urge...I chose something simple from the weekly menu and stayed on track! 

So here's the plan for the week!


Monday:  Sausage and Tortellini Soup, Roasted Garlic Bread, Tossed Salad.

This soup is excellent!  It is really hearty and tasty--it was the go to meal today because I had made a huge batch two weeks ago and had half frozen. All I had to do was throw the ice block in a pot and warm it up! 

Tuesday: Frozen Pizza, Cheesy Cauliflower, and Cantaloupe

I know it's a weird combo, but it will be another easy meal. I am headed out to eat with some girlfriends (YAY!) and Jim will be fending for all.

Wednesday: Chicken Salad, Crescent Rolls (This got pushed to this week's menu because we ended up grabbing something and bringing it home.)

Thursday: Mexican Melt Style Fish, Corn, Rice

Friday: Cranberry Chicken Wreath, Broccoli, Apple Slices

Saturday: Meat Pies, Orzo with veggies, and Snow Peas

Sunday: Chicken Enchilada, Cornbread, Guac and Chips

We are chicken heavy this week...but chicken was on sale!

Menu Planning in 2011

I usually plan a weekly menu (and try to stick to it)! I always like to see what others are making and I definitely see the benefits of sharing weekly menus with others.  If nothing else, it's fun to see what (and how) other families eat. So, today, like many others, I'm linking up to I'm An Organizing Junkie's Menu Plan Monday.

Here's what we are eating this week:

Monday: Citrus Tilapia, Mac and Cheese, Broccoli

Tuesday: Spaghetti, Meatballs, and tossed Salad

Wednesday: Sweet Italian Sausage Sub, Roasted Potatoes, Corn

Thursday: Chicken Caesar Salad, Crescent Rolls

Friday: Eggs, Sausage, Tater Tots, Blueberries

Saturday: Steak, Baked Potato,  Mixed Veggies

Sunday: Peachy Pork Chops, Baked Home Made Fries, Corn (or some other veggie)

The shopping is done for the week...It makes me SOOO happy to be off on the right foot this year!
